Either. You can book online or buy tickets from the booth at the start of the pier. I would suggest that you decide which cruise you would like to go on and then contact the captain on the morning of the day that you have chosen, to check that they are sailing that day. All cruises are of course dependent on weather conditions.
Does anyone know the difference between the 2.5 hour Yorkshire Belle trip to Bempton Cliffs and the 3 hour RSPB one, which uses the same boat? The RSPB one is much more expensive - is it worth it for the extra half hour or are there other benefits - e,g less passengers?

2.5 hour trip very informative and there were many opportunities to see all types of sea birds. Perhaps the RSPB trip stops for longer at various spots. For example we saw seals on a small beach on the way back to Bridlington harbour. It would have been good to get a little closer and have time to look at them for a bit longer but time was running out. Nevertheless it was a great trip and good value for money. Also with the RSPB trip you are supporting the reserve as well.
