One more day to order pie for Thanksgiving! We’re in the final stages of preparation: pre-baking pie crust Our pumpkin pies have a fully baked pie shell before we pour the filling in to bake again. We use ceramic pie weights to hold the crust in place in the oven. They also conduct heat and help crisp up the bottom!
